Just made this King Ranch chicken from Homesick Texan. YUMMO-http://homesicktexan.blogspot.com/2007/10/king-of-casseroles-king-ranch-chicken.html For the Ro-Tel- I just reduced a can of diced tomatoes with a hot chili pepper, a little onion, bell pepper, cumin, cilantro, parsley & a little garlic. She lists 2 recipes. I used the one with the Campbell's soup---the second one. I'm going to make her chess pie a lil later. I'm making homemade salsa right now. It's gone up to $4.50 at Woolies. I aint payin' dat! |

at woolies- I got the hot chili peppers in the produce and the chili powder in the spices---although--the chili powder is hotter then I use back home. I ordered some New Mexico chili powder from that fireworksfood.com today. we'll see if that's milder in hotness. Back home, I used to use a "Fiesta" brand. I never knew what type of pepper it came from. I can only find Borlotti beans here. They look like pinto's but they're a bit smaller. They taste the same though. I ordered some of those today too. I'll plant some to try to get my own going when they get here. btw... the chess pie I made was WAY too sweet. We can hardly eat it. |

I found the Borlotti beans at Woolies and thats what I used for my refried beans - everyone loved them except my youngest who is a hugely picky eater. He thought they were too sweet - the onion carmelized a bit when I fried the beans. I'll have to check out Woolies spice section - I thought I had looked it through but apparently I missed it - thanks for the heads up about the spiciness - my Aussie hubby does not like spicy food! We've been sick, so we're not eating a lot. I sauteed some onions and carrots, and tossed in some white fish fillets, topped with pesto, and threw in some salsa and sliced lemon. Let it steam until the fish flakes. |

it's a custard type pie. This one had lemon juice and lemon zest in it. I liked the lemon a lot but it was just WAY too sweet. I made a homemade no-bake cheese cake Wed. night. I whip up a block of cream cheese (room temp), a small container sour cream with a little vanilla and probably 1/2 to 3/4 cup sugar ( I taste it to see if it needs more). I had some dream whip from the states I had brought (I have used the canned whipped cream but I imagine you can just whip up regular cream to cool whip consistency). You fold the prepared dream whip in and put it on a base of crushed McVite's digestive cookies (substitution for graham crackers) a little sugar and butter pressed into a pie plate. Refrigerate. It's so easy and so good. I made fideo on Wed to serve with the rest of the King Ranch chicken caserole. I used some short bits of angel hair pasta I found at woolies to make it. yumm... |

Vicki- I made those tortillas about a month or so ago and they were soooooo good! I think the new Mission tortillas here are starting to taste a lot more like the tortillas you can get back home, but nothing beats the fresh, homemade type! |

I made them again for breakfast and they didn't turn out as good they kept sticking to everything and I had a hard time rolling them out. I don't know what I did different. I found a recipe that calls for them made with lard instead. I'm going to try that recipe next.I had Kangaroo for the first time tonight! um.... reminds me of deer from back home. A lil gamey... I made it TEXAN style- Chicken fried roo. lol. It costs more then beef- I will certainly buy beef the next time but all in all-not so bad. Lil D---I saw your recipe for those oreo cookies on your blog. I'm going to try those soon. When you made your crock pot rotisserie chook-- did you put water under the foil? |

I just made some oven bbq'd chicken. I miss the variety of bbq sauces back home but I've just been making my own with brown sugar/ketchup/vinegar & spices. It was yummy. I'm having a friend's teenage son over on Thurs. I'm making something my son loved at that age (but I don't particularly care for) tater tot casserole. Kids food- lol. |

Hey Vicki, I haven't been on here in ages so missed your question until now-Have you tried the Oreo Chocolate Chip Cookies yet? I made them again last week and one of Steve's Uncles said they were his favorite dessert ever! I think I might have also linked to a really awesome Chocolate Bundt Cake? This is everyone's second favorite dessert at Sunday dinner-http://realmomkitchen.com/3015/decadent-choclate-bundt-cake/ And sorry, to finally answer your question, no, I don't put any water in the bottom of the crock pot, just the balls of foil and the chicken resting on top of that.
